Attempting a matcha corn latte

Similar to my last post about matcha ube lattes, my inspiration for this one also came from matcha content online. Corn milk seems to come from Vietnam (sα»―a bαΊ―p), where whole corn cobs are boiled in milk together with some condensed milk, vanilla extract and salt. You can also buy corn milk in stores in some countries. I've seen others online just use canned corn boiled in their milk of choice for it, though, with little or nothing added to it. Decided I would try that! I've never had corn milk before and I cannot find it here in stores.

Steps

  1. Bought canned corn, the small cans (285g).
  2. Put the corn of a small can into a pot together with an eyeballed amount of oat milk; made sure it covered everything and was a bit more milk than corn. I decided to not add anything else for now because the canned corn tends to be sweet enough already.
  3. I used my hand blender to blend the corn a bit while it was cooking on high heat.
  4. After cooking for a while, I strained it through a very fine tea strain into a big mason jar to put into my fridge for the next day.

I sadly didn't take any pictures because during the process I was being silly and jumping and dancing around with my fiancΓ©e in the kitchen and simply forgot, but it's just corn. Not as impressive as the purple yam!

Color and Smell

It's not yellow, more an offwhite, creamier white; I guess they may be coloring it a little when sold. The smell is unmistakenly corn-y, like fresh corn on the cob.

Taste

I think I made it quite strong possibly. Maybe the corn to milk ratio is different in commercial products or you simply use less of the milk in your beverages (don't know), but the taste was really strong. I enjoyed it and I would drink it again, but it completely obliterated the matcha. Couldn't taste it anymore. I think not adding any sweetener to the corn milk was a good choice because it was already sweet enough for me personally, but I see no problem if I also add some condensed sweetened coconut milk, vanilla extract and salt the next time.

Conclusion

I think I should either use less corn or more milk in the pot, and I should add less corn milk into my matcha for the next one (or add more oat milk on top). Other than that, it's very enjoyable and interesting. I ate some of the corn leftovers for dinner.
