How to make a White Chocolate Matcha bar
My fiancΓ©e gifted me a white chocolate bar with matcha for Christmas!
I have to be careful with chocolate because it's a trigger food for my Crohn's disease, but very little and preferably white chocolate is working okay now.
I thought why not let her tell you all about it herself? So here's what she wrote.
Last Christmas, I happened to receive a chocolate making kit as a present, which I didn't get to utilize all year. So when I heard Ava being disappointed about the lack of easily available vegan chocolate with matcha flavour a few weeks ago, it was clear to me that I have to try making some of my own to give to her as a Christmas present.
With that idea in mind I now just had to wait for an opportunity, when she'd be away from Home for some time, so she wouldn't notice that I snatched one of her matcha tins. Luckily she had an office day soon after, so I was good to go.
The Chocolate Making Kit contained all the necessary ingredients for basic chocolate plus a few extra things for flavor and decoration, also a small double boiler bowl and a thermometer to observe the temperature (which is important in making chocolate to get the right consistency and surface), a silicone mold, and three instruction leaflets for the basic chocolate kinds (dark, light and white).
Due to Ava being sensitive to cocoa, it was obvious that I'd have to go with white - which also had the advantage that it would take the colour of the matcha better, as I assumed.
The recipe required a bit of adjusting; 35 grams of cocoa butter, 2 tablespoons of agave syrup as a sweetener and 25 grams of almond flour as a replacement for milk powder, then added a big teaspoon of matcha powder by Cha-Do as the last step, whisked it in thoroughly with a spoon. When it had cooled down enough to the right temperature I poured it into the mold and set it into the fridge for about half an hour to properly solidify.
I kept the chocolate cool until it was time to exchange gifts, as was recommended, and according to Ava's reaction it turned out delicious! So definitely an enjoyable and rewarding experience and surely not the last time I'll make my own chocolate. :)
